You've guessed it; we love summer. It's the season of sunshine, outdoor activities, and deliciously fresh salads. Most importantly, it is also the season of wine; crisp, fresh, citrusy, tangy, fun wine.

It features fresh tomatoes, crunchy peppers, and a tangy-sweet vinaigrette. This salad is a fitting addition to any summer gathering, accompanied by laughter and a refreshing rosé.

Ingredients

For the salad:

  • 2 medium-sized tomatoes, chopped
  • 1 orange bell pepper, diced
  • 1/2 small red onion, thinly sliced
  • 2 cups cubed watermelon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted slivered almonds
  • a handful of fresh basil leaves, chopped

For the vinaigrette:

  • 1 tablespoon Dijon mustard
  • 2 tablespoons pure maple syrup
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • salt and freshly ground black pepper, to taste

Instructions

  1. In a large mixing bowl, combine the chopped tomatoes, diced orange bell pepper, and thinly sliced red onion.
  2. In a small mixing bowl, whisk together the Dijon mustard, maple syrup, olive oil, apple cider vinegar, salt, and pepper until well combined.
  3. Drizzle the vinaigrette over the tomato-pepper-onion mixture and toss well to coat.
  4. Add the cubed watermelon, crumbled feta cheese, and toasted slivered almonds to the mixing bowl and gently toss everything together.
  5. Finally, sprinkle the chopped basil leaves over the top of the salad and give it one last gentle toss.
  6. Serve chilled or at room temperature, garnished with additional basil leaves and a few extra slivered almonds, if desired.
